There are many ways to make cheese, and should you desire to know how to make exotic cheeses, this manual is not for you. You can however buy books on how to make cheeses. I am merely going to describe how to make a simple cheese as a way to preserve milk.
Items needed:
- Milk: You can use cow's milk, goat's milk, or other types depending on your preference.
- Acid: This can be lemon juice, vinegar, or citric acid, which helps in separating the curds from the whey.
- Salt: To add flavor to the cheese and help with preservation.
Here are the steps to make basic cheese:
- Heat the milk in a pot until it reaches around 185°F (85°C) while stirring occasionally to prevent scorching.
- Add the acid slowly to the hot milk and stir gently. This will cause the curds to separate from the whey.
- Let it sit undisturbed for about 10-15 minutes to allow the curds to form fully.
- Line a colander with cheesecloth and carefully pour the curds into it to drain the whey.
- Add salt to the curds according to your taste and mix it in.
- Gather the corners of the cheesecloth and tie them together to form a pouch. Hang this pouch to drain for several hours or overnight.
- Once the cheese has reached your desired consistency, you can eat it.
